At Bankstown airport in western Sydney, the lowest temperature recorded overnight was 27.1C, breaking a 53-year-old record for the warmest minimum temperature recorded during any night of the year.
The RFS has issued a total fire ban for most of eastern and northeastern NSW for Sunday, including Greater Sydney, Illawarra, the Hunter and north coast.
More than 60 bushfires were still burning across the state, but most had been brought under control by firefighters as a southerly wind change led to a rapid drop in temperatures.
These included South Australia and Victoria. Hotter weather is expected again from Tuesday, despite the official start of summer still being a few days away.

"Another place, Cobar, only went down to 28.9 which is a November record for them and that's a station that has 59 years of data, so quite a long record there", Ms Kirkup said. Australia has been experiencing hotter and longer summers with last season dubbed the "Black Summer" by Prime Minister Scott Morrison due to unusually prolonged and intense bushfires that burned almost 12 million hectares (30 million acres), killed 33 people and an estimated one billion animals. At least 33 people were killed. By 04:30, the temperature had risen back up to 30C, the Sydney Morning Herald reports.
The previous record at Observatory Hill was 24.8C in 1967.
Today's figures come after warnings from state health authorities to maintain social distancing as thousands flock to beaches around Sydney this weekend.
There are now 45 bush and grass fires burning in the state.
New South Wales Police Minister David Elliott warned the local population not to become complacent about the risk of fires during this season.
"This is the first time since the devastating season past year we've seen widespread elevated fire danger", Mr McKechnie said.
RFS Commissioner Rob Rogers said on Sunday the service was deploying "overwhelming force" to attack every major blaze and encouraged NSW residents to have their fire plans ready.
